Taco Al Pastor

My boyfriend and I got really into tacos al pastor when in Mexico. They're not easy to make at home in the traditional sense, unless. you have a skewer for your barbeque. We've made an easier way of making them that is still a lot of effort but can be done from home. For this recipe, we were almost always making enough for 7 people. The meat keeps though, so if you have leftovers they're great to re-heat

Recipe for meat:

  • Cut a piece of pork tenderloin in thin strips, the thinner the better. 

  • Buy 2 guajillo chiles and 6 morita chiles, and put them on boiling water until they feel soft. (Alternativley you could look for a powdered version of the chiles). 

  • Cut a quarter onion, one tomato, three garlic cloves, 1/3 cup of orange juice, one table spoon of oregano, and blend all together with the chiles. You may taste the mix and decide if it needs more chiles. For a milder taste, you may add more tomatoes. 

  • Cover the tenderloin slices with the mix and let them marinate. Three hours should be enough, however for a better taste let it rest overnight. 

  • Cook the tenderloin pieces on the grill until they get crispy. Alternativeley, you may layer them on a small shawarma cooker, this will resemble more the authentic tacos. 

  • Cut the meet in smaller slices and serve with pineapple, cilantro, cheese, guac, and lime juice.
