Jamie Oliver Pancakes
The basic pancake recipe is full of ingredients that you should have around your house, leaving you to go to the store for the avocado, tomato and bacon. This recipe requires a bit more chopping and 2 pans (one for bacon and one for pancakes). The effort is worth it though. I thank Jamie Oliver for the recipe.

Recipe:

1 cup flour

1.5-2 tsp baking soda

1 egg

1 cup milk

1 fresh green Chile (i didn’t have so used a bit of hot sauce)

A little less than 1/4 cup cheese

1 handful of corn (used around 5 spoons of canned corn)

2 tbsp of oil
Toppings:
-
Bacon (i used 2 pieces for each person but the limit does not exist)

4 ripe tomatoes
-
1 ripe avocado (half per person)

1 lime
-
Fresh cilantro if you have it
-
Maple syrup and yogurt to preference
Serving: made 9 pancakes for 3 people which was enough (3 each)
Mix milk and egg together in separate measuring cup and add to flower/baking soda mix. Then add the rest of the ingredients. While stuff is cooking start chopping!
