Carrot cake

Half Baked Harvest inspiration is back! I have made this cake twice now, once for my mother's birthday and once for my own. It's delicious and moist and cheaper than spending $20-50 buying a cake.

The ONLY thing I changed about this recipe is I used raspberry jam instead of strawberry, as well as for the toppings. We also didn't "fold" the jam correctly, so our cake was pink rather than white with pink swirls. We kinda liked it better this way though.
