Apple Butter and Maple Cookies

"Half-Baked Harvest" is by far my favourite cooking website. If you don't follow her Instagram already, you should because she inspires me every day. These cookies are the best. I was hesitant to make them because they require a bit of extra work compared to other cookies. For one, they require apple butter which is incredibly hard to find in stores in Toronto (I spent 20 minutes searching). Luckily, she has her own recipe for apple butter which I used. They also require browning the butter as well as icing. I opted out of the icing because they taste delicious by themselves!

I copied the recipe exactly as is, except for a couple of things:

  • For the apple butter recipe: I halved the recipe and opted out of using the cloves and nutmeg. I also added extra maple syrup. The apple butter is worth making because it tastes delicious in oatmeal as well.

  • I didn't brown the butter as much as I should have. This was a mistake because I was worried I would burn it. They still tasted delicious though.

  • Next time I'll add a bit more apple butter to let the apple flavour really come through.
