Mexican Bowl

This recipe is delicious and super easy to alter. I make it differently everytime depending on what ingredients I have around the house. This recipe is quicker with leftover potatoes, otherwise it takes a couple of pans. I often use the actifryer for the potatoes if I have time to make them from scratch.

For the egg you'll want it runny to create a bit more sauce. Putting a lid over an egg with a bit of water is the best way to create the perfect egg, but to each their own.

  • 1 egg per person

 

  • 1 potato per person

  • 1-2 Garlic cloves

 

  • 1 can black beans rinsed and drained

  • 2 teaspoons olive oil

  • 1/4 teaspoon ground cumin

  • 1/4 chilli powder 

  • 1/4 teaspoon garlic powder or a garlic clove

  • 1/8 teaspoon cayenne pepper

 

Toppings:

  • juice of half a lime

  • salt and pepper 

  • Diced tomato

  • Diced Avocado

  • Cilantro if you have it!
